Importers and roasters navigate a market in transformation as micro-lots, emerging origins, and supply chain transparency redefine the future of coffee.
The transformation sweeping through the coffee industry extends far beyond changing consumer habits. The real shift is taking place upstream in the supply chain, influencing sourcing decisions, green coffee selection, and roasting strategies. According to insights gathered by the Host Milano Observatory, the coffee sector is undergoing a profound evolution driven by specialty products, traceability, sustainability, and emerging market opportunities.
From Specialty Coffee to Full Traceability
Demand is increasingly focused on identity, quality, and transparent sourcing. According to Stefania Galeandro, Sales & Marketing Manager of Best Coffee, roasters are seeking distinctive coffees backed by credible supply chain stories. While the mass market continues to dominate volumes, specialty coffee and micro-lot offerings are experiencing steady growth.
A major catalyst for this transition is the European Union Deforestation Regulation (EUDR). Rather than viewing the regulation as a challenge, Best Coffee sees it as an accelerator toward more transparent and responsible sourcing practices.
Alberto Polojac of Imperator shares a similar perspective. The company has embraced digitalization and blockchain-based quality management systems to strengthen traceability and compliance. He describes the current phase as a "positive crisis" that is driving the industry toward new production and cultural models, fundamentally changing how coffee is sourced, processed, and communicated to consumers.
Fine Robusta and Emerging Origins Gain Momentum
One of the most notable trends is the growing recognition of Fine Robusta as a premium-quality coffee with its own distinct identity. At the same time, importers are reporting increased interest in coffees from emerging origins, particularly regions in Indonesia and East Africa.

They increasingly seek selected blends, traceable raw materials, and products capable of combining tradition with innovation. Maintaining consistently high-quality standards has therefore become essential for meeting the expectations of both domestic and international markets.
New Opportunities in Global Markets
The demand for premium Italian coffee continues to grow worldwide. Markets such as North America, the Middle East, and parts of Asia are presenting significant opportunities, fueled by strong interest in Italian culture, lifestyle, and authentic coffee experiences.
As traceability, quality assurance, and innovative sourcing models become central pillars of the industry, the coffee supply chain continues to reinvent itself with increasingly sophisticated tools and technologies.
